Award-winning pasta salad inspired by popular soup flavors, crafted with Contadina® ingredients.
Ingredients:
  • 4 ounces dry rotini pasta
  • 1 (14.5 ounce) can Contadina® Petite Diced Tomatoes, drained
  • 1 (15 ounce) can white beans, rinsed and drained
  • 0.75 cup diced zucchini
  • 0.75 cup diced yellow bell pepper
  • 0.75 cup diced carrot
  • 0.5 cup frozen peas, thawed
  • 0.25 cup chopped fresh basil
  • 2 tablespoons finely diced red onion
  • 0.25 cup Grated Parmesan cheese
  • 0.25 cup red wine vinegar
  • 2 tablespoons Contadina® Tomato Paste
  • 1 tablespoon chopped fresh oregano
  • 1 pinch Salt and black pepper to taste
Instructions:
  • Prepare pasta per the instructions on the package. Drain and rinse with cold water.
  • Toss together pasta and all salad ingredients, excluding Parmesan cheese, in a large serving bowl.
  • Combine dressing ingredients in a small bowl, then drizzle over salad and toss to mix. Chill for at least 10 minutes to meld flavors. Top with grated Parmesan cheese before serving, as desired.
