Contadina® Baked Meatballs in Tomato Herb Sauce

Homemade baked meatballs in rich tomato sauce over pasta with Parmesan. A scrumptious family dinner favorite!
Ingredients:
  • 1 (6 ounce) can CONTADINA® Tomato Paste, divided
  • 2 teaspoons dried basil, divided
  • 2 teaspoons dried oregano, divided
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon pepper
  • 1.5 cups fresh bread crumbs*
  • 0.5 cup grated Parmesan cheese
  • 0.5 cup golden raisins, coarsely chopped
  • 1.25 pounds lean ground beef or ground turkey, 93% lean (not turkey breast)
  • 2 (14.5 ounce) cans CONTADINA® Diced Tomatoes, undrained
  • 1 teaspoon sugar
  • 0.5 teaspoon salt
  • Cooked pasta
Instructions:
  • Preheat your oven to 375 degrees F and generously coat a baking sheet with cooking spray after lining it with foil.
  • In a large bowl, mix 1/2 can of tomato paste, 1 egg, 1 tsp. each of basil and oregano, onion powder, garlic powder, and pepper. Add bread crumbs, Parmesan, and raisins, stirring until well combined.
  • Combine the turkey mixture thoroughly by hand or with a large spoon. Shape into 16 meatballs, each about 1 1/2 inches in size. Bake for 20 minutes, or until golden brown and fully cooked (internal temperature of 165 degrees F).
  • In a large saucepan, combine the rest of the tomato paste with diced tomatoes, 1 tsp. each of oregano and basil, sugar, and salt. Bring to a boil, then simmer uncovered for 10 minutes. Add the baked meatballs to the sauce and simmer for an additional 5 minutes to combine flavors. Serve over pasta with Parmesan cheese, if desired.
