Quick and easy paella ready in a flash for busy weeknights!
Ingredients:
  • 36.40 gm olive oil
  • 600g firm white fish fillets (such as ling), cut into 3cm pieces
  • 1 dried chorizo, halved lengthways, thinly sliced
  • 1 red capsicum, thinly sliced
  • 2 anchovy fillets, chopped
  • 160g pea
  • 300g couscous
  • Chopped flat-leaf parsley, to serve
  • Lemon wedges, to serve
Instructions:
  • In a large, deep frypan with a lid, heat oil over medium heat. Season the fish and cook for 2-3 minutes, then add chorizo and cook for another 2 minutes until fragrant. Stir in capsicum, anchovy, and peas, season with pepper, and cook for 1-2 more minutes.
  • Bring the kettle to a boil. Add couscous to the frypan and pour over 1 1/2 cups (375ml) boiling water, making sure the couscous is fully submerged. Take the pan off the heat, cover with a lid, and let sit for 2 minutes until water is absorbed. Stir well, garnish with parsley, and serve with lemon wedges.
