Bourbon-infused Instant Pot® beef stew, a cozy meal for six in cold weather.
Ingredients:
  • 1 tablespoon olive oil, or to taste
  • 1 large onion, coarsely chopped
  • 1 large clove garlic, crushed
  • 1.5 pounds cubed beef stew meat
  • 0.5 cup bourbon
  • 2 potatoes, chopped
  • 1 (15 ounce) can black beans, drained
  • 1 (14 ounce) can whole-kernel corn
  • 1 (8 ounce) package fresh mushrooms, sliced
  • 2 carrots, chopped
  • 2 teaspoons salt
  • 2 teaspoons chili powder
  • 1.25 teaspoons ground black pepper
  • 1 teaspoon ground cumin
  • 0.5 teaspoon ground cinnamon
Instructions:
  • Heat up your Instant Pot® on Saute mode. Add oil, onion, and garlic, and sauté until starting to soften, about 3 to 5 minutes. Next, add the beef and brown on all sides for about 5 minutes. Pour in the bourbon and deglaze the pot by scraping up any browned bits from the bottom.
  • Stop sautéing. Combine in the pot potatoes, black beans, corn, mushrooms, and carrots. Season beef and vegetables with salt, chili powder, pepper, cumin, and cinnamon. Mix well. Seal the lid tightly. Choose Stew function and set the timer for 45 minutes. Wait for 10 to 15 minutes for pressure to build.
  • Allow the pressure to naturally release for 15 to 20 minutes following the manufacturer's guidance. Ensure the valve has dropped and all pressure has been released before opening the lid.
