Instant Pot® Florentine pasta: Pesto, spinach, Parmesan, and chicken blend perfectly for an Italian-inspired meal.
Ingredients:
  • 1.5 pounds cubed boneless chicken breast
  • 2 teaspoons Cajun seasoning, or to taste
  • 2 tablespoons olive oil
  • 0.5 medium onion, finely chopped
  • 1 (16 ounce) package whole grain penne pasta
  • 1 (10 ounce) bag baby spinach leaves
  • 2 cups water, or as needed
  • 1 pint heavy whipping cream
  • 2.5 tablespoons basil pesto
  • 6 ounces grated Parmesan cheese
Instructions:
  • In a bowl, coat chicken with Cajun seasoning by stirring until well coated.
  • Preheat a multi-functional pressure cooker on the Saute setting with olive oil. Cook seasoned chicken for 3-5 minutes until browned. Add onions and cook for an additional 5 minutes until chicken is cooked through. Deglaze by stirring to incorporate any browned bits.
  • Layer the dry pasta over the chicken and gently pour water until the pasta is just submerged. Top with spinach and turn off the Saute function.
  • Secure the lid by locking it in place. Choose high pressure based on manufacturer's guidelines and set the timer for 1 minute. Let the pressure build for 10 to 15 minutes.
  • Using caution, carefully release pressure using the quick-release method following the manufacturer's guidelines for about 5 minutes. Then, unlock and remove the lid before stirring to combine the ingredients.
  • Heat the Saute function. Pour in whipping cream followed by basil pesto; mix well. Add Parmesan cheese, cover, and cook until cheese melts for approximately 5 minutes. Uncover, stir, and serve.
