Instant Pot® Massaman curry beef stew: A fusion of Thai and Indian flavors, delivering a taste of Southeast Asia with a simplified ingredient list. Serve over rice with fresh toppings for an impressive yet easy weeknight meal.
Ingredients:
  • 2 lb beef stew meat
  • 2 tablespoons garam masala
  • 1 teaspoon garlic powder
  • 2 tablespoons butter
  • 1 cup chopped shallots
  • 1 tablespoon chopped fresh gingerroot
  • 4 cups 1-inch diced peeled russet potatoes (about 1 1/2 lb)
  • 1 can (14 oz) coconut milk (not cream of coconut)
  • 1 cup Progresso™ beef flavored broth (from 32-oz carton)
  • 2 tablespoons soy sauce
  • 3 tablespoons lime juice
  • 2 tablespoons cornstarch
  • 1 tablespoon packed brown sugar
  • 1 tablespoon fish sauce
  • 4 cups hot cooked white rice
  • 1/2 cup chopped roasted peanuts
  • 1/2 cup chopped fresh cilantro leaves
Instructions:
  • Combine beef with aromatic garam masala and garlic powder in a large bowl. Spray the 6-quart Instant Pot® insert with cooking spray. Heat butter in the insert using SAUTE mode, then brown the beef in two batches on each side for 2 to 4 minutes. Cancel the mode.
  • Add the beef back to the pot. Mix in shallots, gingerroot, and potatoes. Pour in coconut milk, broth, and soy sauce. Close the lid and set the pressure valve to SEALING. Choose MANUAL and pressure cook on high for 45 minutes. Turn off the heat. Move the pressure valve to VENTING for quick release.
  • Combine lime juice, cornstarch, brown sugar, and fish sauce in a small bowl and whisk until smooth. Heat the mixture on SAUTE mode until simmering, then add cornstarch mixture and cook for 30 to 60 seconds until thickened. Remove from heat and serve over rice garnished with peanuts and cilantro.
