Quick Instant Pot® Moroccan Chicken with Israeli couscous - a speedy, flavorful meal.
Ingredients:
  • 1 tablespoon Moroccan spice rub
  • 1 pound chicken tenders
  • 2 tablespoons olive oil
  • 0.5 small red onion, chopped
  • 2 cloves garlic, minced
  • 1 cup pearl (Israeli) couscous
  • 0.75 cup chicken broth
  • 0.5 cup chickpeas, rinsed and drained
  • 2 tablespoons toasted almonds
Instructions:
  • Drizzle 1 tablespoon of savory olive oil over the chicken and generously sprinkle with aromatic Moroccan seasoning in a shallow dish.
  • Preheat a multi-functional pressure cooker (like Instant Pot®) by selecting the Saute function. Add 1 tablespoon each of olive oil and butter when the cooker is ready. Sear the chicken until golden, around 3 to 5 minutes on each side. Set the chicken aside to keep it warm. Cook onion, carrot, and garlic until softened, approximately 5 minutes. Stir in pearl couscous, broth, and chickpeas. Turn off the Saute function and return the chicken to the cooker.
  • Secure the lid by closing and locking it. Choose high pressure as per manufacturer's guidelines, then set the timer for 5 minutes. Give it 10 to 15 minutes for pressure to build.
  • Release pressure using the quick-release method as per the manufacturer's instructions for about 5 minutes. Open the lid and garnish the chicken with almonds before serving.
