Make Instant Pot® arroz con pollo without extra gadgets - easy and delicious!
Ingredients:
  • 2 tablespoons olive oil
  • 0.5 cup salt pork, diced
  • 2 pounds boneless skinless chicken breasts, chopped
  • 2 (1.41 ounce) packages sazon seasoning with achiote
  • 1 cup sofrito
  • 1 (8 ounce) can tomato sauce
  • 0.5 cup pimento-stuffed green olives
  • 1 tablespoon capers
  • 3 cups white rice, rinsed
  • 1 (16 ounce) can gandules (green pigeon peas), undrained
  • 0.25 teaspoon salt, or to taste
  • 0.125 teaspoon ground black pepper, to taste
Instructions:
  • Preheat Instant Pot® to Saute function. Heat olive oil, then brown salt pork for about 2 minutes. Add chicken and sazon seasoning, cooking until chicken is white on all sides, approximately 5 minutes.
  • Cook the sofrito for 5 minutes, stirring occasionally. Pour in the tomato sauce, olives, and capers. Cook until bubbly and flavors are combined, about 1 to 2 minutes. Mix in the rice thoroughly and turn off the Saute function.
  • Pour the liquid from the can of gandules into a large measuring cup. Adjust with water to reach 2 1/2 cups of liquid. Combine the gandules and liquid in the pot, stirring thoroughly. Season with salt and pepper to taste.
  • Securely seal the lid, choosing high pressure as per the manufacturer's guidelines. Program the timer for 17 minutes, then wait for 10 to 15 minutes for pressure to build.
  • Following the manufacturer's instructions, release pressure naturally for approximately 15 minutes. Carefully quick-release the remaining pressure for about 5 minutes, then unlock and remove the lid. Fluff the rice with a fork and serve.
