Instant Pot® Salisbury Steak with Onion and Mushroom Gravy

Make Instant Pot Salisbury steak for a nostalgic, home-cooked meal.
Ingredients:
  • 0.25 cup fresh bread crumbs
  • 0.25 cup finely diced onion
  • 1 egg
  • 1 teaspoon dried parsley
  • 1 teaspoon Worcestershire sauce
  • 1 clove garlic, minced, or more to taste
  • 1 pound ground beef
  • 0.5 pound lean ground pork
  • 2 tablespoons avocado oil
  • 1 large onion, thinly sliced
  • 1 (8 ounce) package sliced cremini mushrooms
  • 0.25 cup dry red wine
  • 2 cups beef broth
  • 1 tablespoon tomato paste
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 4 tablespoons beef broth
  • 2 tablespoons cornstarch
Instructions:
  • In a large bowl, mix together bread crumbs, onion, egg, parsley, Worcestershire sauce, and garlic. Add beef and pork, and gently combine to form 8 equal portions. Place the patties on a plate, cover with plastic wrap, and refrigerate for 1 hour. Let them sit at room temperature for 30 minutes before cooking.
  • Preheat a multi-functional pressure cooker (such as Instant Pot®) on Saute mode. Drizzle in oil and sear patties in batches for 2 minutes per side. Once done, transfer patties to a plate. Saute onions until browned for about 2 minutes, then add mushrooms and cook for an additional 2 minutes.
  • Add the wine to the pot and stir to scrape up all the flavorful brown bits. Stir in the broth, tomato paste, salt, and pepper until well combined. Add the cooked patties and any juices back to the pot, turning to coat them in the mixture.
  • Securely seal the lid, set to high pressure following the manufacturer's guidelines, and set the timer for 15 minutes. Let the pressure build for 10 to 15 minutes.
  • Follow the manufacturer's instructions for natural-release method for 10 to 40 minutes. Unlock and lift the lid to release pressure.
  • In a bowl, whisk together 4 tablespoons of broth and cornstarch until smooth. Gradually pour the mixture into the pot while stirring continuously. Turn on the Saute function and simmer until the sauce thickens, approximately 5 minutes.
