Instant Pot® chicken breast with supreme pizza flavors, low carb twist, served with a side salad for a satisfying meal.
Ingredients:
  • 2 teaspoons olive oil
  • 1 teaspoon Italian seasoning
  • 1.5 pounds skinless, boneless chicken breast halves
  • 1 cup chicken broth
  • 6 ounces mild Italian sausage (such as Johnsonville®)
  • 0.5 green bell pepper, chopped
  • 4 ounces sliced mushrooms
  • 0.5 small red onion, chopped
  • 1 (14 ounce) can pizza sauce
  • 1 (2.25 ounce) can sliced black olives, drained
  • 0.5 cup shredded mozzarella cheese
Instructions:
  • 1. Preheat Instant Pot® on Saute function. Drizzle oil, then season chicken with Italian seasoning before adding to the pot. Sear chicken until golden, approximately 2 minutes each side. Turn off Saute function and add chicken broth.
  • Securely seal the lid and set the pressure to high as per the manufacturer's guidelines. Cook on high pressure for 10 minutes and wait for 5 minutes for pressure to build up.
  • Vent steam using the quick release method following manufacturer's guidelines for about 5 minutes. Unlock and lift off the lid. Place chicken on a serving plate. Drain any liquid from the pot.
  • Using the Saute function once more, toss in the Italian sausage. Break up the sausage into small pieces for about 2 minutes. Introduce the bell pepper, mushrooms, and onion, cooking until the sausage is golden for an additional 2 minutes. Stir in the pizza sauce and olives, cooking and stirring continuously for 4 minutes.
  • Drizzle the sauce over the chicken on the serving plate and sprinkle with mozzarella cheese.
