Easy Instant Pot® vegan red beans and rice - a versatile dish perfect as a side or main course.
Ingredients:
  • 4 cups vegetable broth
  • 2 cups water
  • 1.5 cups dried red beans, rinsed
  • 1.25 cups brown rice, rinsed well
  • 1 medium onion, chopped
  • 1 medium green bell pepper, chopped
  • 3 stalks celery, sliced
  • 1 tablespoon Creole seasoning
  • 4 cloves garlic, minced
  • 2 teaspoons hot sauce (such as Louisiana®)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 0.25 cup chopped fresh parsley
Instructions:
  • In your multi-functional pressure cooker, combine broth, water, beans, rice, onion, bell pepper, celery, Creole seasoning, garlic, hot sauce, thyme, oregano, and bay leaves. Give it a good stir, then lock the lid in place.
  • Follow the manufacturer's instructions to set the pressure to high. Set the timer for 50 minutes and allow 20 minutes for the pressure to build.
  • Follow the manufacturer's instructions to naturally release the pressure for about 15 minutes. After removing the lid, stir the dish and allow it to stand for 10 minutes to thicken.
  • Plate the dish and adorn with fresh parsley for a visually appealing finish.
