Instant Pot® Vegetarian Baked Beans: Quick and easy - no pre-soaking required, ready in 25 minutes.
Ingredients:
  • 1 (16 ounce) package dry navy beans, rinsed and picked through
  • 8 cups water
  • 1 medium onion, chopped
  • 1 green bell pepper, chopped
  • 1 tablespoon vegetable oil
  • 2 teaspoons smoked paprika
  • 1.25 cups vegetable broth
  • 0.25 cup pure maple syrup
  • 0.25 cup apple cider vinegar
  • 3 tablespoons tomato paste
  • 2 tablespoons yellow mustard
Instructions:
  • Add beans to your Instant Pot ®, cover with water, lock the lid, and set to high pressure for 25 minutes following the manufacturer's instructions. Wait for 10 minutes for pressure to build.
  • Release pressure with the quick release method following the manufacturer's instructions for about 5 minutes, then drain beans in a colander.
  • Turn on the Saute function and add diced onion, bell pepper, minced garlic, a drizzle of oil, smoked paprika, and garlic. Cook until the onions are translucent, which should take around 3 minutes. Turn off the heat.
  • Add the drained beans back to the pot and mix in the broth, maple syrup, vinegar, tomato paste, and mustard until well combined.
  • Seal the lid securely and set to high pressure per manufacturer's guidelines for 10 minutes. Let pressure build for 10 minutes. Quick release pressure as per manufacturer's instructions for around 5 minutes. Open the lid and let it rest for 5 minutes to thicken.
