Savory wild rice and barley pilaf, a perfect pairing with pork or chicken, ready in a flash using an Instant Pot®.
Ingredients:
  • 1 tablespoon olive oil
  • 1 (8 ounce) package sliced fresh mushrooms
  • 1 clove garlic, minced
  • 1 teaspoon dried dill weed
  • 0.5 teaspoon dried oregano
  • 3 cups chicken broth
  • 0.75 cup wild rice
  • 0.5 cup quick-cooking pearl barley
  • 0.5 cup frozen peas, thawed
  • 1 pinch salt and ground black pepper to taste
Instructions:
  • Preheat your Instant Pot® on Saute mode. Drizzle olive oil and allow to heat for 1 minute. Add mushrooms and onion, saute until onion is soft, around 3 minutes. Stir in garlic, dill, and oregano; cook for 1 minute. Press Cancel to stop cooking.
  • Add the chicken broth and wild rice to the pot, then seal the lid securely. Set the pressure to high as per your cooker's guidelines and cook for 25 minutes. Let the pressure build for 10 minutes.
  • Carefully release pressure using the quick-release method for 2 minutes as per manufacturer's instructions. Unlock and remove the lid, then stir in barley and peas. Cover with the lid and let sit for 10 minutes. Remove the lid and allow it to sit until the barley is tender and the mixture has thickened, about 5 minutes more. Season with salt and pepper to taste.
