Wholesome chicken and barley stew made in minutes using Instant Pot for a quick and delightful family meal.
Ingredients:
  • 1 teaspoon vegetable oil
  • 2 medium onions, chopped
  • 4 stalks celery, diced
  • 2 medium red bell peppers, chopped
  • 4 (6 ounce) chicken breasts
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 1 (28 ounce) can diced tomatoes with juice
  • 2 cups pearl barley, rinsed
  • 1 (14.5 ounce) can chicken stock
  • 0.5 teaspoon dried thyme
Instructions:
  • Preheat a multi-functional pressure cooker like an Instant Pot using the Saute function. Add oil, onions, celery, and bell peppers to the pot and cook until vegetables are tender, approximately 5 minutes.
  • Season the chicken breasts with a pinch of salt and pepper, then place them in the pot. Add tomatoes, pearl barley, chicken stock, and thyme. Secure the lid and set the pressure cooker to high pressure for 25 minutes following the manufacturer's guidelines. Let the pressure release naturally for 10 to 15 minutes after cooking.
  • Carefully release pressure using the quick-release method following the manufacturer's instructions, approximately 5 minutes. Unlock and remove the lid, then shred the chicken on a cutting board using 2 forks. Return shredded chicken to the pot and mix well.
