Instant Pot chicken and gnocchi soup: Quick, flavorful, packed with fresh veggies and herbs. Perfect for dinner.
Ingredients:
  • 2 tablespoons olive oil
  • 1 pound chicken tenders
  • 2 tablespoons pesto
  • 1 pinch garlic powder, or to taste
  • 2 cups chicken broth
  • 1 medium onion, diced
  • 1 medium green bell pepper, diced
  • 3 medium carrots, sliced
  • 3 tablespoons unsalted butter
  • 0.5 cup all-purpose flour
  • 4 cloves garlic, crushed
  • 1 teaspoon dried oregano
  • 0.25 teaspoon dried sage
  • 2 cups milk, or more as needed
  • 1 (17.5 ounce) package potato gnocchi
  • 6 large fresh basil leaves
  • 3 cups fresh spinach
Instructions:
  • Preheat your multi-functional pressure cooker like an Instant Pot®. Drizzle in oil and choose the Saute function. Sear chicken with pesto, garlic powder, salt, and pepper in the pot, and pour in chicken broth.
  • Layer chicken with a colorful mix of onion, bell pepper, and carrots. Season generously with salt and pepper. Seal the Instant Pot, choose high pressure setting, and set the timer for 15 minutes. Allow pressure to build for 10 to 15 minutes.
  • In a skillet over medium heat, melt butter until it turns golden. Mix in flour until thickened. Stir in garlic, oregano, and sage while ensuring constant stirring to prevent burning. Gradually add 2 cups of milk, stirring until sauce is smooth, thick, and free of lumps. Adjust consistency by adding more milk as desired.
  • Allow the pressure to naturally release for 10 to 40 minutes, following the manufacturer's guidelines.
  • Allow the perfectly cooked chicken to gently cool after being taken out of the Instant Pot®, then expertly dice it into small, bite-sized cubes.
  • Once the chicken has cooled, combine gnocchi, basil, and roux in the Instant Pot®. Seal the lid and choose low pressure as per manufacturer's directions; then, set the timer for 1 minute. Give it 10 to 15 minutes for pressure to build up.
  • Slice the spinach into strips and add it to the cooker with the chicken. Stir for 2 minutes to heat through before serving; the soup's heat will cook the spinach fast.
