Instant Pot Chicken Saltimbocca

Elevate classic saltimbocca with easy Instant Pot chicken twist.
Ingredients:
  • 2 tablespoons butter
  • 4 skinless, boneless chicken breast halves
  • salt and ground black pepper to taste
  • 2 tablespoons chopped fresh sage
  • 4 slices prosciutto
  • 0.25 cup all-purpose flour
  • 2 tablespoons olive oil
  • 1 shallot, diced
  • 1 teaspoon minced garlic
  • 1 cup chicken broth
  • 0.25 cup lemon juice
  • 1 tablespoon lemon zest
  • 2 tablespoons water
  • 1 tablespoon cornstarch
  • 4 slices mozzarella cheese
Instructions:
  • Lay chicken breasts flat on a surface. Slice horizontally without cutting all the way through, then unfold like a book. Season with salt and pepper, sprinkle with sage, place a slice of prosciutto, and fold closed. Dredge in flour.
  • Preheat a multi-functional pressure cooker (such as Instant Pot) on Saute mode. Melt butter along with olive oil in the pot. Sear chicken breasts until they are beautifully golden brown on both sides, approximately 3 to 4 minutes per side. Transfer the chicken to a plate and keep it aside.
  • Sauté shallot and garlic in the hot pot until softened, about 5 to 7 minutes. Add chicken broth to deglaze, boiling while scraping off the browned bits with a wooden spoon. Mix in lemon juice and zest, then turn off the heat.
  • Place a trivet in the pot and place the chicken on top. Lock the lid and select high pressure based on manufacturer's instructions; set the timer for 5 minutes. Let the pressure build for 10 to 15 minutes.
  • Let the pressure naturally release for 15 minutes following the manufacturer's directions. Take out the chicken and trivet, then transfer the chicken to a baking pan.
  • In a small bowl, mix water and cornstarch to make a slurry. Turn on the Instant Pot to Saute mode. Stir in the cornstarch slurry and cook until the sauce thickens, approximately 5 minutes. Drizzle the thickened sauce over the chicken and sprinkle with mozzarella cheese.
