Instant Pot Coconut Curry Pork Chops

"Quick and delicious coconut curry pork chops ready in 30 minutes using an Instant Pot."
Ingredients:
  • 4 (1/2 inch thick) bone-in pork chops
  • 1 teaspoon granulated garlic
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons red curry paste
  • 4 teaspoons coconut oil
  • 0.5 cup coconut milk
  • 1 teaspoon arrowroot powder
  • 2 wedges lime, or to taste
Instructions:
  • Rub the pork chops with a flavorful mixture of garlic, salt, and pepper.
  • Preheat your multi-functional pressure cooker like the Instant Pot by selecting the Saute function. Add the curry paste and coconut oil, then gently whisk in the coconut milk. Carefully place the pork chops in the cooker and turn off the Saute function.
  • Seal the lid securely and set to high pressure as per the manufacturer's manual. Cook for 7 minutes, allowing pressure to build for 10 to 15 minutes.
  • Follow the manufacturer's instructions for natural pressure release for 12 minutes. Then do a quick pressure release for about 5 minutes. Unlock and remove the lid.
  • Pour out a spoonful of flavorful curry sauce into a bowl. Stir in arrowroot powder to make a smooth slurry. Pour the slurry into the pot and switch on the Saute function. Cook until the sauce thickens, roughly 3 minutes. Squeeze in lime wedges according to your taste preference.
