Instant Pot orange almond coconut rice pudding: Creamy and comforting, bursting with citrus and nutty flavors.
Ingredients:
  • 2 cups unsweetened vanilla-flavored almond milk, divided
  • 1 cup orange juice
  • 1 cup Arborio rice
  • 0.25 teaspoon salt
  • 1 egg, lightly beaten
  • 1 teaspoon orange extract
  • 0.33333334326744 cup cream of coconut (such as Coco Lopez®)
  • 1 teaspoon grated orange zest
Instructions:
  • In the pot of your electric pressure cooker, pour in 1 3/4 cups almond milk, orange juice, rice, and salt. Seal the pressure cooker, select the "Manual" setting on high pressure, and set the timer for 4 minutes.
  • Let pressure release naturally for 10 minutes, then use the quick-release valve to release any remaining pressure.
  • Combine the remaining 1/4 cup of milk, egg, and orange extract in a small bowl, whisk until blended. Stir in 1/2 cup of cooked rice until fully mixed. Pour the mixture into the pot and set to "Saute" mode. Add cream of coconut and orange zest. Cook and stir until the egg is set, approximately 2 minutes. Stir well.
