Make quick and delicious Instant Pot potato soup with red potatoes and crispy bacon for a comforting meal.
Ingredients:
  • 6 slices bacon, chopped
  • 1 large onion, chopped
  • 2 ribs celery, sliced
  • 1 tablespoon minced garlic
  • 1 teaspoon ground thyme
  • 2.5 pounds red potatoes, diced
  • 4 cups chicken broth
  • 2 tablespoons milk
  • 2 tablespoons cornstarch
  • 1 cup milk
Instructions:
  • Preheat a multi-functional pressure cooker (such as Instant Pot) on the Sauté function. Heat oil for 1 minute, then add bacon and cook until crispy and fat has rendered out, around 8 minutes. Use a slotted spoon to transfer bacon to a paper towel-lined plate.
  • In the same pan with bacon drippings, sauté onion and celery for 2 minutes. Then, add garlic and thyme and cook for an additional minute. Turn off the sauté mode. Add potatoes and broth to the pan. Seal the lid and set to high pressure following the manufacturer's instructions. Cook under pressure for 8 minutes after the pressure builds for about 10 minutes.
  • Allow the pressure to dissipate naturally following the manufacturer's guidelines for approximately 10 minutes.
  • In a small bowl, create a silky slurry by whisking together 2 tablespoons of milk and cornstarch. Stir in the cornstarch mixture along with 1 cup of milk into the pot. Season with salt and pepper. Allow the soup to thicken by sitting and stirring occasionally for about 10 minutes. Serve in bowls and top with crispy bacon.
