Instant Pot shepherd's pie: Beef and mashed potatoes cooked quickly in pressure cooker, then baked to perfection.
Ingredients:
  • 1 tablespoon vegetable oil
  • 1 pound ground beef
  • 1 cup onion, diced
  • 3 cloves garlic, minced
  • 0.25 teaspoon ground black pepper
  • 1 tablespoon tomato paste
  • 1 tablespoon Worcestershire sauce
  • 0.5 teaspoon thyme
  • 1 cup beef broth
  • 2 cups frozen peas and carrots
  • 3 medium potatoes, peeled
  • 0.5 cup half-and-half
  • 2 tablespoons butter
  • 0.25 teaspoon garlic salt
Instructions:
  • Preheat a multi-functional pressure cooker, like an Instant Pot, using the Sauté function. Add oil and sauté ground beef, onion, garlic, salt, and pepper until beef is browned and crumbly and onion is soft, for about 5 minutes. Mix in tomato paste, Worcestershire sauce, and thyme. Add broth, then mix in frozen peas and carrots until fully combined. Turn off the Sauté function.
  • Position the collapsible metal trivet above the meat and vegetables in the pot. Arrange the potatoes on top of the trivet. Secure and seal the lid, then select high pressure based on manufacturer's guidelines. Set the timer for 15 minutes for small potatoes, or 20 minutes for medium to large ones. Let the pressure build for 10 to 15 minutes.
  • Follow the manufacturer's instructions to release pressure naturally for 10 minutes. Then carefully use the quick-release method as per the instructions for about 5 minutes. Open the lid and transfer the potatoes to a bowl. Turn off the Instant Pot and remove the hot trivet with caution.
  • Combine the creamy half-and-half, rich butter, and savory garlic salt with the potatoes in the bowl, then mash until smooth and fully combined.
  • Position the oven rack 6 inches below the heat source and preheat the broiler.
  • Transfer the meat-vegetable mixture from the Instant Pot into an 8-inch square baking dish, then generously layer and smooth out the mashed potatoes on top.
  • Broil in the heated oven until the top becomes golden brown, approximately 3 minutes.
