Instant Pot Shepherd's Pie: Quick and easy version with pressure-cooked potatoes on top of the filling. Simply mash, assemble, and enjoy!
Ingredients:
  • 1 tablespoon avocado oil or other neutral oil with high smoke point
  • 1 pound ground lamb or beef
  • 1 yellow onion, diced
  • 1 celery stalk, diced
  • 1 large carrot, diced
  • 1 garlic clove, minced
  • 1 1/4 teaspoons kosher salt
  • 1 teaspoon dried thyme
  • 1/2 teaspoon freshly ground black pepper
  • 1 tablespoon Worcestershire sauce
  • 1 cup vegetable broth
  • 1 cup frozen peas
  • 4 medium russet potatoes, peeled (about 2 1/2 pounds)
  • 1/2 cup whole milk
Instructions:
  • Sauté the lamb in avocado oil on the Instant Pot's Sauté setting for 7 minutes until fully cooked and no pink remains. Use a slotted spoon to transfer the meat out or pour into a colander to drain excess fat.
  • Sauté onion, celery, carrot, garlic, and 1/2 teaspoon of salt in a pot for 4 minutes until onion is translucent. Use released moisture to scrape up browned bits for more flavor. Add thyme, pepper, Worcestershire, and tomato paste. Return lamb to the pot, then add vegetable broth and peas.
  • Add the potatoes: Arrange them in a single layer on a tall steam rack in the pot, ensuring the rack's legs are resting securely on the bottom.
  • Lock the lid and set the Pressure Release to Sealing. Cancel the current program, then choose Pressure Cook or Manual and set the timer to 15 minutes on high pressure. Allow 15 minutes for the pot to come up to pressure before cooking starts.
  • After the cooking program finishes, release the pressure quickly by switching the Pressure Release to Venting.
  • Transfer the boiled potatoes to a bowl and add milk and 3/4 teaspoon salt. Mash until smooth using a potato masher. If the filling is too liquidy, simmer on Sauté mode while mashing. Remove the steam rack, then stir in 1/2 cup of mashed potatoes into the lamb mixture. Adjust salt to taste.
  • Place the lamb mixture into a broiler-safe 8-inch square baking dish. Spoon the mashed potatoes on top and spread them out with a fork to create a textured surface. Optionally, serve the lamb mixture and mashed potatoes separately instead of broiling them together.
  • Broil the shepherd's pie in a toaster oven or conventional oven until the potatoes are lightly browned, about 5 minutes. Check often.
  • Plate the shepherd’s pie and serve hot. *Note from Emma: Leftovers can be stored in the fridge for up to a week and reheated in the oven or microwave.*
