Air-fried beef with taco seasoning, perfect for creating delicious taco bowls all week long.
Ingredients:
  • 2 pounds beef stew meat
  • 0.5 onion, sliced
  • 0.33333334326744 cup taco seasoning mix (such as Savory Spice®)
  • 0.25 cup water
  • 2 teaspoons garlic salt
  • 1 (10 ounce) bag yellow rice (such as Vigo®)
  • 1 (15.25 ounce) can black beans, drained, or to taste
  • 1 (15.25 ounce) can corn kernels, drained, or to taste
  • 1 (8 ounce) package shredded Cheddar cheese, or to taste
Instructions:
  • 1. Preheat your multi-functional pressure cooker on the Sauté setting. Heat oil, then brown the beef for about 3 minutes on each side. Next, add onion, taco seasoning, 1/4 cup water, and garlic salt, and mix everything together.
  • Seal the lid securely and choose high pressure as directed by the manufacturer. Set the timer for 30 minutes and patiently wait for the pressure to build for 10 to 15 minutes.
  • In a large saucepan, bring 2 1/2 cups of water to a boil. Add rice and stir for 1 minute. Cover tightly with a lid, reduce heat to a simmer, and cook until rice is tender, 20 to 25 minutes. Allow it to cool completely off the heat.
  • Allow pressure to release naturally following the manufacturer's guidelines for 10 to 40 minutes. Then, let it cool completely.
  • Evenly distribute rice and beef into 6 reusable containers. Sprinkle each with a generous portion of black beans, corn, and Cheddar cheese. Seal containers and chill in the refrigerator.
