Chef John's easy and crispy potato pancakes made with instant potato flakes, perfect as a flavorful side dish.
Ingredients:
  • 1 cup cold water
  • 1 large egg, beaten
  • 0.5 teaspoon salt
  • 0.75 cup dry potato flakes
  • 2 tablespoons chopped fresh chives, divided
  • 1 pinch freshly ground black pepper
  • 1 pinch cayenne pepper, or to taste
  • 1 tablespoon butter
  • 0.25 cup sour cream for garnish
Instructions:
  • In a large bowl, combine cold water, egg, and salt, whisking until the salt is dissolved. Add dry potato flakes and mix well. Stir in 1 tablespoon of chives and season with black pepper and cayenne pepper.
  • Take the potato mixture and divide it evenly into 4 parts, then shape each part into a pancake.
  • Combine oil and butter in a large skillet over medium-high heat, swirling to mix.
  • Add pancakes to the pan and cook over medium heat until bottoms are browned, approximately 10 minutes. Flip, gently press down, and continue cooking until the other sides are browned, around 7 to 8 minutes.
  • Plate the pancakes and garnish each one with a dollop of sour cream and sprinkle with the rest of the chives.
