Ingredients:
  • 1 pound cubed lamb meat
  • 1 large onion, halved and sliced
  • 1 pound baking potatoes, peeled and sliced
  • 1 carrot, peeled and sliced
  • 1 large stalk celery, sliced
  • 2 tablespoons chopped fresh parsley
  • 2 cups beef stock
  • 1 tablespoon chopped fresh parsley, for garnish
Instructions:
  • Heat your oven to 325°F (165°C).
  • Create a flavorful masterpiece by stacking lamb, onion, potatoes, carrot, and celery in a cozy oven-proof pot or casserole dish. Sprinkle each layer with a touch of parsley, salt, and pepper. Finish by generously pouring in beef stock, then seal tightly.
  • Roast in the preheated oven until the lamb is melt-in-your-mouth tender, about 1 ½ to 2 hours. Serve in bowls and sprinkle with extra fresh parsley for a finishing touch.
