Delight in a hearty Irish stew with tender lamb and potatoes, a comforting classic for all to savor!
Ingredients:
  • 2 pounds boneless lamb neck or shoulder
  • 6 medium (2 pounds) potatoes, cut into 1/2-inch slices
  • 3 medium onions, sliced
  • 2 teaspoons salt
  • 1/4 teaspoon pepper
  • 2 cups water
  • Chopped fresh parsley
Instructions:
  • Prepare the lamb by trimming off any excess fat and cutting it into 1-inch cubes.
  • In a 4-quart Dutch oven, create layers with half of the lamb, potatoes, and onions. Sprinkle half of the salt and pepper over the layers. Repeat the layering process.
  • Pour in water and bring it to a boil. Lower the heat, cover the pot, and let it simmer for 1 1/2 to 2 hours until the lamb is tender.
  • Remove any excess fat from the broth. Garnish the stew with fresh parsley and serve in bowls with optional pickled red cabbage.
