Classic Irish stew featuring succulent lamb, onions, and potatoes in a flavorful broth, perfect for celebrating Saint Patrick's Day.
Ingredients:
  • 1 tablespoon olive oil
  • 2 pounds boneless lamb shoulder, cut into 1 1/2 inch pieces
  • 0.5 teaspoon salt, or to taste
  • freshly ground black pepper to taste
  • 1 large onion, sliced
  • 2 carrots, peeled and cut into large chunks
  • 1 parsnip, peeled and cut into large chunks
  • 4 cups water, or as needed
  • 3 large potatoes, peeled and quartered
  • 1 tablespoon chopped fresh rosemary
  • 1 cup coarsely chopped leeks
  • 1 tablespoon chopped fresh parsley for garnish
Instructions:
  • Assemble all your ingredients.
  • In a large stockpot or Dutch oven over medium heat, warm oil. Add lamb pieces and cook until perfectly browned, gently stirring. Season generously with salt and pepper for flavor.
  • Add the aromatic trio of onion, carrots, and parsnips to the pot and sauté briefly. Pour in water, cover, and bring to a gentle boil. Lower the heat and let it simmer until the lamb reaches desired tenderness, typically around 45 to 60 minutes, depending on the type of meat chosen.
  • Add the potatoes and let simmer for 15 to 20 minutes. Then, introduce the leeks and rosemary and keep simmering uncovered until the potatoes are tender yet intact.
  • Garnish bowls with fresh parsley and serve steaming hot.
