Irvin Lin's essential Thanksgiving side: Mom's napa cabbage with dried shrimp.
Ingredients:
  • 2 tablespoons dried shrimp, small size preferred, 1/4-inch in size
  • 1/2 to 3/4 cup boiling water, enough to generously cover the shrimp
  • 1 medium head (2 pounds) napa cabbage
  • 2 tablespoons peanut or vegetable oil
  • 4 scallions, cut into 1-inch pieces
  • 1 tablespoon (about a 1-inch piece) fresh ginger, peeled and minced
  • 1 tablespoon soy sauce
  • 1 tablespoon cold water
  • 2 teaspoons cornstarch
  • 1 teaspoon kosher salt, plus more to taste
  • 1/2 teaspoon white pepper, plus more to taste
Instructions:
  • To rehydrate the dried shrimp, simply place them in a bowl and pour boiling water over them. Cover with a plate and let sit for 30 minutes until they appear lighter in color and plump up.
  • Prepare the cabbage by splitting the napa cabbage in half lengthwise, rinsing, and drying it. Remove the core and divide the cabbage into 1-inch pieces, placing the white pieces in one bowl and the leafy green pieces in another.
  • After the shrimp has plumped up, drain and dispose of the excess liquid.
  • Sauté the shrimp and cabbage: Heat peanut oil in a large wok or skillet over high heat until shimmering. Carefully add scallions, ginger, and rehydrated shrimp. Stir-fry for about 1 minute until fragrant. Add the white part of napa cabbage and cook for 3-4 minutes until edges are translucent. Reduce heat to medium-low, add green cabbage leaves, and cook until wilted, about 2 minutes.
  • Create a cornstarch slurry by mixing soy sauce, cold water, and cornstarch in a bowl until smooth. Pour the slurry over the cabbage and cook while stirring until the sauce thickens to the consistency of whole milk.
  • Enhance the stir fry: Season it with a generous pinch of salt and a sprinkle of pepper. Take a delicate taste and adjust seasoning to your liking. The cabbage should appear translucent and luscious, adorned with bits of dried shrimp throughout.
