Celebrate Pride with these vibrant Rice Krispie Treats inspired by survival and identity.
Ingredients:
  • Nonstick cooking spray
  • 15 ounces regular-sized marshmallows, divided
  • 6 tablespoons salted butter, divided
  • 1 1/2 teaspoons clear imitation vanilla, divided
  • Red food coloring
  • Blue food coloring
  • Green food coloring
  • Yellow food coloring
  • 7 1/2 cups (about 6 ounces) Rice Krispies cereal, divided
  • 1/2 teaspoon sea salt, like Maldon Sea Salt Flakes (optional)
Instructions:
  • Prepare the pan by lightly spraying an 8 x 8-inch square baking pan with cooking spray. Line it with parchment paper, leaving a 1-inch overhang on the sides for easy removal of the rice krispie treats, and lightly spray the parchment paper.
  • Melt the marshmallows: Coat a large microwave-safe bowl and a silicone spatula with cooking spray. Combine 2 1/2 ounces (about 12) marshmallows and 1 tablespoon butter in the bowl. Microwave on high for 1 minute or until the marshmallows expand. Quickly stir in 1/4 teaspoon vanilla with the greased spatula until most of the marshmallows are melted.
  • Enhance the hue: Combine 12 drops of red food coloring and 10 drops of blue food coloring, stirring well until the color is evenly blended.
  • Mix in the cereal: Stir in 1 1/4 cups of cereal until well combined. Transfer the mixture into the prepared pan.
  • Press mixture into pan: Lightly spray your hands with cooking spray and quickly spread the colored rice krispies into a thin, even layer to cover the entire pan. Adjust parchment paper if needed as you work. Respray your hands if they become sticky.
  • Clean and dry: Wash and dry the bowl and spatula thoroughly. Repeat this process for the next 5 colorful layers using the following food coloring: - 12 drops blue food coloring - 12 drops green food coloring - 12 drops yellow food coloring - 10 drops yellow and 4 drops red food coloring for orange - 12 drops red food coloring.
  • After the last layer, sprinkle with sea salt if desired, then allow the rice krispies to cool for at least one hour. Lift from the pan using the overhanging parchment paper, transfer to a cutting board, and remove the parchment paper. Cut into 12 pieces with a sharp chef's knife.
