Vibrant tuna and veggie rice paper rolls, a nutritious lunch option!
Ingredients:
  • 2 x 185g cans Tuna Chunks in Springwater
  • 39.60 gm whole-egg mayonnaise
  • 1 spring onion, thinly sliced
  • 1 carrot, peeled, halved crossways
  • 6 rice paper sheets
  • 40g baby spinach leaves
  • 1 Lebanese cucumber, finely shredded
  • 1 small beetroot, peeled, finely shredded
  • 1 yellow nectarine, stoned, thinly sliced
  • Sweet chilli sauce, to serve
Instructions:
  • In a medium bowl, combine the tuna, mayonnaise, and spring onion, stirring until fully incorporated.
  • Slice 1 carrot into thin discs, then use a 1cm star cutter to make carrot stars. Finally, finely shred the rest of the carrot.
  • Soak one rice paper sheet in warm water for 30 seconds to soften, then drain on paper towel. Place on a plate and add a mix of carrot stars, spinach, shredded carrot, cucumber, beetroot, nectarine, and tuna in the center. Roll tightly to enclose the filling. Repeat with remaining ingredients. Serve with sweet chili sauce.
