Mediterranean-style tuna pasta salad recipe

Mediterranean-inspired salad, perfect for dinner or bring to work lunch.
Ingredients:
  • 375g penne
  • 425g can chunk-style tuna in oil, drained
  • 187.50 ml chopped flat-leaf parsley
  • 120g olive
  • 1 red capsicum, seeded, thinly sliced
  • 275g jar marinated artichoke hearts, drained
  • 60g pkt Baby Rocket
  • 40g pine nut
  • 150g mayonnaise
  • 60ml lemon juice
  • 17.70 gm Dijon mustard
Instructions:
  • Prepare the pasta in a large pot of boiling water according to package instructions until it is al dente. Then, cool it under cold water and drain thoroughly.
  • In a small jug, combine mayonnaise, lemon juice, mustard, and season with salt and pepper to make the lemon dressing.
  • In a large bowl, mix the pasta with half of the dressing. Add in the tuna, parsley, olives, capsicum, and artichoke. Gently toss everything together.
  • Plate the salad generously on individual plates, then generously scatter fresh arugula and toasted pine nuts on top. Drizzle the remaining dressing over each serving and enjoy!
