Tuna Cobbler

Indulge in a comforting tuna casserole crowned with fluffy biscuits.
Ingredients:
  • 1 1/2 cups frozen mixed vegetables
  • 2 cans (5 oz each) tuna, drained
  • 1 can (10 3/4 oz) condensed cream of chicken soup
  • 1/2 cup milk
  • 1 jar (2 oz) sliced pimientos, drained, if desired
  • 2 tablespoons sweet pickle relish
  • 1 teaspoon lemon juice
  • 1 cup Original Bisquick™ mix
  • 1/3 cup cold water
  • Paprika, if desired
Instructions:
  • Preheat your oven to 400°F and generously spray a 1 1/2-quart round casserole dish with cooking spray.
  • In a 2-quart saucepan, combine frozen vegetables, tuna, soup, milk, pimientos, relish, and lemon juice. Stir well until thoroughly mixed. Cook over medium heat for 6 to 8 minutes, stirring occasionally, until vegetables are thawed and mixture is hot and bubbly. Transfer mixture to a casserole dish.
  • Combine Bisquick mix and cold water in a medium bowl, stirring with a fork until a soft dough forms. Beat vigorously for 30 seconds. Drop 4 spoonfuls of dough onto the tuna mixture and sprinkle with paprika.
  • Bake without covering for 20-25 minutes or until the biscuits turn golden brown.
