Italian chicken noodle soup

Indulge in comforting and flavorful chicken soup anytime, not just when you're under the weather.
Ingredients:
  • 765.00 gm chicken style liquid stock
  • 1 brown onion, roughly chopped
  • 2 carrots, roughly chopped
  • 2 celery stalks, roughly chopped
  • 1 dried bay leaf
  • 1.6kg whole chicken
  • 80g spaghetti, broken
  • 20.00 ml fresh oregano leaves
  • 62.50 ml fresh basil leaves
Instructions:
  • In a large saucepan over medium heat, combine stock, onion, carrot, celery, garlic, bay leaf, and 6 cups of water. Bring to a boil, then reduce heat to low. Add the chicken breast-side down, cover, and simmer for 1 hour and 30 minutes.
  • Gently place the chicken in a heatproof bowl and allow it to cool. Strain the stock into a large heatproof bowl, discard solids, and return the stock to the pot. Bring it to a boil over medium heat, then add the pasta. Simmer for 8 to 10 minutes until the pasta is tender. Bon appétit!
  • After the chicken has cooled down, discard the skin and bones then use two forks to shred it.
  • Add the chicken back to the soup and simmer for 2 minutes until warmed. Mix in the lemon juice and oregano. Season generously with salt and pepper. Garnish with fresh basil before serving.
