Easy chicken noodle soup

Soul-soothing chicken soup for instant comfort.
Ingredients:
  • 36.40 gm olive oil
  • 1 medium onion, finely chopped
  • 1 medium carrot, diced
  • 1 large stick celery, thinly sliced
  • 1 medium potato, peeled and diced
  • 1530.00 gm (1.5 litres) chicken style liquid stock
  • 300g chicken breast fillets, diced
  • 50g spaghetti, broken into 5cm pieces
  • 40.00 ml chopped flat eaf parsley leaves
  • Thick wholegrain toast, to serve
Instructions:
  • In a saucepan over medium heat, warm the oil until shimmering. Stir in the onion and cook for 3 minutes, stirring frequently. Then, add the carrot, celery, and potato, and cook together for 5 more minutes, stirring often.
  • Pour in the flavorful stock and bring to a lively boil. Lower the heat, cover, and gently simmer for 15 minutes. Toss in the chicken and pasta, partially cover, and cook for 8-10 minutes until the pasta is perfectly tender.
  • Mix in freshly chopped parsley. Add salt and pepper to your liking. Serve the soup in bowls and enjoy with wholegrain toast.
