Italian chicken recipe for two

Easy Tuscan-inspired chicken dinner for two, ready in 25 minutes.
Ingredients:
  • 9.20 gm olive oil
  • 10g butter
  • 2 small chicken breast fillets
  • 2 garlic clove, finely chopped
  • 40g (1/4 cup) sun-dried tomatoes, sliced
  • 40.00 gm white wine
  • 125ml (1/2 cup) thickened cream
  • 60ml (1/4 cup) chicken style liquid stock
  • 30g baby spinach
  • 125.00 ml fresh basil leaves, torn
  • Crusty bread, to serve
Instructions:
  • In a large non-stick frying pan over high heat, heat oil and butter until the butter is foamy. Season the chicken, add to the pan, and reduce heat to medium-high. Cook the chicken for 5 minutes on each side until just cooked through. Transfer to a plate and cover with foil to keep warm.
  • Add the garlic to the pan and cook, stirring, for 1 minute until fragrant. Mix in the tomatoes, then pour in the wine and cook for 1 minute until slightly reduced. Pour in the cream and stock. Return the chicken to the pan and simmer for 5 minutes until the liquid reduces. Stir in the spinach until wilted. Season with salt and pepper, and garnish with basil. Serve with crusty bread.
