Festive Italian Christmas cookies with cocoa, orange liqueur, and homemade orange icing.
Ingredients:
  • 3.5 cups all-purpose flour, or as needed
  • 4 teaspoons baking powder
  • 1 cup white sugar
  • 0.5 cup butter, softened
  • 4 eggs
  • 1 cup cocoa powder
  • 2 tablespoons orange-flavored liqueur
  • 2 teaspoons vanilla extract
  • 2 cups sifted confectioners' sugar
  • 2 tablespoons water
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C) and generously grease 2 baking sheets.
  • In a bowl, combine sifted flour and baking powder. Using an electric mixer, beat butter and sugar in a separate bowl until creamy, then mix in eggs. Add in cocoa powder, 2 tablespoons liqueur, and 2 teaspoons vanilla extract to the creamed butter mixture and stir into the flour mixture until just combined.
  • Transfer dough to a lightly floured surface and knead, sprinkling additional flour to prevent sticking. Roll 1 to 2 tablespoons of dough into a log shape, then shape as desired before placing on the baking sheet.
  • Bake until the cookie edges are lightly browned, about 10 minutes in the preheated oven.
  • Mix confectioners' sugar, 2 tablespoons liqueur, water, and 2 teaspoons vanilla extract in a bowl until smooth. Dip cookies into the creamy icing. Let cookies cool on a wire rack lined with waxed paper.
