Italian Christmas Cream Cake

Italian cream cake made with buttermilk and toasted coconut, frosted with cream of coconut, and topped with pecans - a decadent Christmas treat.
Ingredients:
  • 1.5 cups sweetened flaked coconut
  • 1 cup buttermilk, at room temperature
  • 2 teaspoons vanilla extract
  • 2.5 cups cake flour
  • 2 teaspoons baking powder
  • 0.5 teaspoon salt
  • 0.5 teaspoon baking soda
  • 1.75 cups white sugar
  • 1.5 cups butter, softened
  • 0.25 cup shortening
  • 5 eggs
  • 0.75 cup pecans, chopped
  • 2.25 cups powdered sugar
  • 0.5 cup butter, softened
  • 0.5 cup cream of coconut (such as Coco Lopez®)
  • 0.5 teaspoon vanilla extract
  • 0.125 teaspoon salt
  • 2 (8 ounce) packages cream cheese, softened
  • 1.25 cups pecans, chopped
Instructions:
  • Preheat the oven to 350°F (175°C) and prepare two 9-inch round cake pans by greasing and lining them with parchment paper.
  • Sprinkle coconut flakes evenly on a microwave-safe plate. Microwave on high, stirring every 30 seconds, until lightly browned, for 2 to 3 minutes total.
  • Add coconut to a blender and pulse until finely ground.
  • In a bowl, mix coconut powder, buttermilk, and vanilla extract together. In another bowl, combine cake flour, baking powder, salt, and baking soda.
  • Cream together the sugar, butter, and shortening until fluffy. Incorporate eggs one at a time. Alternate adding the flour mixture and coconut-buttermilk mixture, mixing well after each addition. Fold in the pecans. Divide the batter evenly between the pans.
  • Bake in the preheated oven for 28 to 32 minutes or until a toothpick comes out clean. Let the cakes cool in the pans for 10 minutes before transferring them to wire racks to cool for at least 20 minutes.
  • Beat fluffy powdered sugar and butter, then add cream of coconut, vanilla extract, and salt. Blend in cream cheese until combined. Spread frosting over one cooled cake on a serving platter. Top with the second cake and cover with the rest of the frosting.
  • Gently arrange the remaining pecans on and around the cake for a beautiful presentation.
