Italian Country Vegetable-Barley Skillet

30-minute Italian-inspired skillet dinner with veggies and barley for a hearty meal.
Ingredients:
  • 2 tablespoons garlic-flavored oil
  • 2 medium carrots, sliced (1 cup)
  • 1 medium zucchini, sliced (2 cups)
  • 1 large yellow summer squash, sliced (2 cups)
  • 1 package (8 ounces) sliced mushrooms
  • 1/2 medium red onion, cut into wedges
  • 1 cup uncooked quick-cooking barley
  • 1 jar (28 ounces) chunky spaghetti sauce
  • 1 cup shredded Italian-style six-cheese blend (4 ounces)
Instructions:
  • In a large nonstick skillet, heat oil over medium-high heat. Sauté carrots, zucchini, squash, mushrooms, and onion for about 10 minutes, stirring occasionally, until vegetables are tender.
  • Combine barley, water, and spaghetti sauce in a pot. Bring to a boil, then simmer on low heat for 10 to 12 minutes, stirring occasionally, until the barley is tender. Remove from heat and sprinkle with cheese before serving.
