Cheesy tomato and green onion egg dish ready in 30 minutes without meat.
Ingredients:
  • 2 tablespoons butter or margarine
  • 1/2 cup sliced green onions (8 medium)
  • 8 eggs, beaten
  • 1 cup shredded mozzarella cheese (4 oz)
  • 1/2 cup chopped seeded tomato (1 small)
  • 2 tablespoons chopped fresh parsley
  • 1/8 teaspoon pepper
  • 1/2 cup shredded Parmesan cheese (2 oz)
  • Additional chopped tomato, if desired
  • Additional chopped fresh parsley, if desired
Instructions:
  • In a nonstick skillet, melt butter over medium heat, then sauté onions for 2 to 3 minutes until tender.
  • Gently fold in eggs, mozzarella cheese, tomato, parsley, and pepper. Lower the heat to medium-low, cover, and cook for 9 to 11 minutes until the edges of the eggs are set and the bottom is lightly browned.
  • Top with a generous amount of Parmesan cheese. Cover the dish, then set aside off the heat for 3 to 4 minutes until the cheese is beautifully melted. For extra flair, decorate with more chopped tomato and parsley.
