Potato gem frittata recipe

Indulge in a cozy, cheesy Caprese frittata - a satisfying, low-cal meal perfect for chilly autumn nights.
Ingredients:
  • 450g frozen potato gems
  • 8 eggs, lightly whisked
  • 125ml (1/2 cup) milk
  • 2 green shallots, thinly sliced
  • 250g cocktail truss tomatoes, halved
  • 1 tomato, thickly sliced
  • 1/2 x 220g tub cherry bocconcini, drained
  • Fresh basil leaves, to serve
Instructions:
  • Preheat your oven to 220C/200C fan forced. Line a 22.5cm (base size) ovenproof frying pan with baking paper. Arrange potato gems around the edge of the pan in a double layer ring formation. Bake for 20 minutes or until light golden.
  • In a large jug, combine eggs, milk, and shallots. Season generously.
  • In the center of the pan, gently pour the egg mixture. Place truss tomatoes, tomato slices, and bocconcini on top. Bake for 30 minutes or until the frittata is golden and just set. Before serving, sprinkle basil over the frittata.
