Elevate your entertaining with bacon and zucchini slice adorned with crispy potato gems.
Ingredients:
  • 18.20 gm extra virgin olive oil
  • 4 shortcut bacon rashers, roughly chopped
  • 8 eggs
  • 128.75 gm milk
  • 125.00 ml caramelised onion relish
  • 1/2 x 1kg packet frozen potato gems, thawed
  • 2 zucchini, coarsely grated into long, thin strips
  • 125.00 ml frozen peas
  • 125.00 ml grated cheddar
  • Mixed salad leaves, to serve
Instructions:
  • Preheat your oven to 200C/180C fan-forced and lightly grease a 4cm-deep, 20cm x 28cm rectangular roasting pan.
  • In a small frying pan, heat oil over medium-high heat and add bacon. Cook for 5 minutes, stirring occasionally, until golden and crisp.
  • Whisk together eggs, cream, milk, and 2 tablespoons of relish until well combined. Season with salt and pepper.
  • Layer 2/3 of the potato gems on the bottom of the pan. Follow with the bacon and 3/4 of the zucchini. Carefully pour the egg mixture over the ingredients. Sprinkle with peas and spoon over the remaining relish. Top with cheese and the rest of the potato gems. Finish by adding the remaining zucchini on top.
  • Bake without a cover for 30 to 35 minutes until golden brown and fully cooked. Let it rest for 10 minutes, then slice and enjoy with fresh salad leaves.
