Fruit-filled lemonade ice ring: keeps punch cold, intensifies flavor.
Ingredients:
  • 1 can (12 oz) frozen lemonade concentrate, thawed
  • 4 cans water
  • 2 cups (about 12 large) frozen strawberries
  • 2 lemons, cut into 1/4-inch slices, slices cut in half
  • Fresh mint leaves, if desired
  • 1 can (12 oz) frozen limeade concentrate, thawed
  • 3 cups cold water
  • 4 cups lemon-lime soda pop, chilled
  • 1 bottle (1 liter) club soda, chilled
Instructions:
  • In a pitcher, combine 1 can of lemonade concentrate with 4 cans of water. Pour 2 cups of the lemonade into a 12-cup fluted tube cake pan. Freeze for about 45 minutes until a thin ice coating forms. Use a small, sharp knife to crack the ice crust. Quickly add strawberries, lemon slices, and mint leaves to the liquid, making sure they are partially submerged. Return to freezer for about 1 hour until frozen solid. Add the remaining lemonade, freeze for at least 8 hours or overnight before serving.
  • Combine the lemonade concentrate, limeade concentrate, and 3 cups of water in a 2-quart pitcher. Chill in the refrigerator until needed.
  • Right before serving, combine limeade mixture, soda pop, and club soda in a punch bowl. Quickly dip the ice ring pan into warm water, then invert it to remove the ice ring. Float the ice ring in the punch bowl.
