Italian Easter Rice Pie: Rich, creamy treat with eggs, ricotta, and vanilla, a traditional must-have.
Ingredients:
  • butter for greasing
  • 9 eggs
  • 1.5 cups white sugar
  • 2 pounds ricotta cheese
  • 2 cups heavy whipping cream
  • 1 cup cooked white rice
  • 1 (15 ounce) can crushed pineapple, drained
Instructions:
  • Preheat your oven to 325 degrees F (165 degrees C) while you generously butter a 9x13-inch pan.
  • In a large bowl, vigorously beat the eggs, then incorporate the sugar until well mixed. Add the cheese and vanilla and mix until a smooth and creamy texture is achieved. Pour in the heavy cream and stir gently. Fold in the cooked rice and crushed pineapple, then transfer the mixture into the prepared pan.
  • Bake in the preheated oven for at least 1 hour until the top is golden brown and a knife inserted into the center comes out clean. Chill in the refrigerator until completely cooled.
