Italian-inspired roast pork seasoned with aromatic rosemary and garlic for a burst of unforgettable flavor.
Ingredients:
  • 1 pork loin roast, 2 1/2 to 3 pounds
  • 2 tablespoons chopped fresh rosemary leaves
  • 4 garlic cloves
  • 1 teaspoon pepper
  • 2 tablespoons butter or margarine
  • 1 small onion, chopped (1/4 cup)
  • 1/4 cup olive or vegetable oil
Instructions:
  • Preheat oven to 350°F. Trim fat off pork. Combine finely chopped rosemary and garlic. Cut 8 to 10 deep slits, 2 inches apart, in pork. Fill slits with garlic mixture. Season pork with salt and pepper.
  • In a shallow roasting pan, melt butter in the oven. Sprinkle onion over the butter, then place the pork in the pan and drizzle with oil. Insert a meat thermometer, ensuring the tip is in the center of the thickest part of the pork and not touching the fat. Roast uncovered for 50-60 minutes until the thermometer reads 155°F. Cover with a foil tent and let it rest for 15-20 minutes or until the thermometer reads 160°F. This allows the temperature to rise another 5°F and makes the pork easier to carve.
