Italian sausage and barley soup

Wholesome winter barley and vegetable stew for the whole family.
Ingredients:
  • 4 Italian Pork Sausages, casings removed
  • 1 large carrot, peeled, finely chopped
  • 3 celery sticks, finely chopped
  • 100g pearl barley
  • 400g can cherry tomatoes or diced tomatoes
Instructions:
  • 1. Preheat a large saucepan over high heat. Cook the sausage mince, breaking it into lumps with a wooden spoon, for 5-7 minutes or until golden brown. Stir in the carrot and celery and cook for an additional 5 minutes until veggies are tender.
  • Stir in the barley, cherry tomatoes, and water. Bring to a boil, then reduce heat to medium-low.
  • Simmer for 30 minutes, or until the barley is tender and the soup slightly thickens, stirring occasionally. Season with salt and pepper, and serve hot.
