Italian sausage and cheesy tomato macaroni

Budget-friendly slow cooker family meal.
Ingredients:
  • 18.20 gm extra virgin olive oil
  • 1 brown onion, chopped
  • 3 middle bacon rashers, trimmed, chopped
  • 420g packet Italian beef and pork sausages
  • 255.00 gm chicken style liquid stock
  • 420g can condensed tomato soup
  • 750.00 ml dried pasta curls
  • 82.50 ml light thickened cooking cream
  • 125.00 ml frozen peas
  • 125.00 ml fresh basil leaves, firmly packed
  • 375.00 ml mozzarella, grated
  • 82.50 ml panko breadcrumbs, toasted
  • 2 bunches broccolini, steamed
Instructions:
  • In a large frying pan over medium-high heat, warm oil. Mix in onion and bacon. Stir and cook for 5 minutes until onion is softened. Squeeze sausages out of casings, add to the pan, and cook for 5 minutes, breaking up the sausage mince with a wooden spoon until browned. Transfer all ingredients to slow cooker. Pour in stock, soup, and 1 cup water. Cover and cook on high for 1 hour (or low for 2 hours).
  • Add the pasta and simmer on high for 1 hour (or low for 2 hours), stirring halfway through, until pasta is al dente.
  • Add cream, peas, and fragrant basil, then generously season with pepper. Top with gooey mozzarella followed by crunchy breadcrumbs. Cook on high for 15 minutes or until the cheese is perfectly melted. Uncover, switch off the cooker, and let it sit for 5 minutes. Serve the delectable macaroni alongside steamed broccolini.
