Turkey sausage-stuffed manicotti tubes, smothered in a luscious 3-cheese sauce, perfect for freezing.
Ingredients:
  • 1 (8 ounce) package manicotti shells
  • 1 (20 ounce) package Italian turkey sausages, casings removed
  • 1 (24 ounce) jar roasted garlic spaghetti sauce (such as Barilla®), divided
  • 0.5 teaspoon granulated garlic
  • 0.5 teaspoon Italian seasoning
  • 0.66666668653488 cup shredded mozzarella cheese
  • cooking spray
  • 3 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups whipping cream
  • 0.5 cup shredded fontina cheese
  • 0.5 cup shredded mozzarella cheese
  • 0.25 cup shaved Parmesan cheese
Instructions:
  • 1. Boil generously salted water in a large pot. Cook manicotti until al dente, approximately 7 minutes.
  • Heat a large skillet over medium-high heat. Cook the sausage until browned and crumbly, about 5 to 7 minutes, then drain any excess grease.
  • After draining manicotti tubes, let them cool. Combine sausage with 2 cups of spaghetti sauce, garlic, and Italian seasoning, then simmer for approximately 10 minutes.
  • Gently split open manicotti tubes and lay them flat. Fill each tube with 3 tablespoons of the sausage mixture and a generous amount of mozzarella cheese. Roll up the tubes neatly.
  • Preheat your oven to 375 degrees F (190 degrees C) and lightly grease a 9x13-inch casserole dish.
  • In a saucepan over medium heat, melt butter. Stir in flour until smooth. Gradually add cream, whisking constantly. Cook until thickened, about 5 minutes. Mix in fontina, mozzarella, and Parmesan cheeses until well blended.
  • Spread half of the cheese sauce in the casserole dish. Arrange stuffed tubes seam-side down over the sauce. Pour the rest of the cheese sauce over the tubes and spread the remaining spaghetti sauce down the middle of the dish.
  • Bake in the oven until beautifully golden, for 20-25 minutes.
