Italian White Beans with Chicken

Protein-packed one-dish dinner ready in under 30 minutes.
Ingredients:
  • 1 tablespoon olive or vegetable oil
  • 1 tablespoon chopped fresh or 1 teaspoon dried basil leaves
  • 1 clove garlic, finely chopped
  • 2 cups chopped deli rotisserie chicken (from 2- to 2 1/2-lb chicken)
  • 1/2 cup chopped drained oil-packed sun-dried tomatoes
  • 1/4 cup sliced ripe olives
  • 2 cans (15.5 oz each) great northern beans, drained, rinsed
Instructions:
  • Heat oil in a skillet, sauté basil and garlic for 3 minutes over medium heat, stirring often.
  • Incorporate all remaining ingredients. Cook, stirring often, until heated through.
