Upgrade your crispy chicken sausages with savory cannelini beans in a flavorful white wine sauce.
Ingredients:
  • 600g gluten-free chicken sausages (see note)
  • 375ml white wine
  • 36.40 gm olive oil
  • 1 onion, finely chopped
  • 2 x 400g canned cannellini beans, rinsed, drained
  • 1 roasted red capsicum, chopped
  • 62.50 ml chopped oregano leaves
  • 250.00 ml rocket leaves
  • Shaved parmesan, to serve
  • Lemon wedges, to serve
Instructions:
  • Using a fork, puncture the sausages. Transfer to a frypan along with 1/2 cup (125ml) wine, cover, and cook over medium heat for 5 minutes. Increase heat to medium-high, remove cover, and cook for 3-4 minutes until nearly cooked and the wine has evaporated. Slice the sausages in half lengthwise, place back in the pan cut-side down, and cook for 1 minute until crispy and fully cooked. Set aside.
  • In the same pan over medium heat, sauté onions until soft, about 5-6 minutes. Add capsicum, beans, oregano, remaining wine, and season. Cook until almost evaporated, about 5-6 minutes. Heat sausages on top, then set aside. Mix beans with rocket, and serve topped with sausages, shaved parmesan, and lemon wedges for squeezing.
