Portuguese chicken braised in white wine sauce with linguica sausage for a comforting and light meal.
Ingredients:
  • 2 tablespoons olive oil
  • 8 ounces linguica sausage, sliced
  • 1 onion, sliced
  • 1 green bell pepper, chopped
  • 4 pounds chicken parts
  • 1.5 teaspoons chopped fresh oregano
  • 0.25 teaspoon chopped fresh basil
  • 0.5 teaspoon freshly ground black pepper
  • 1 cup dry white wine
  • 1 cup chicken broth
  • 2 bay leaves
  • 0.25 teaspoon red pepper flakes
  • 1 orange, cut into wedges
Instructions:
  • In a Dutch oven over medium heat, saute sausage, onion, and bell pepper in oil until vegetables are softened and sausage is browned, about 10 minutes. Transfer mixture to a plate using a slotted spoon, keeping the flavorful drippings in the pot.
  • Mix together oregano, basil, salt, and pepper in a bowl and generously season the chicken with the mixture. Place the seasoned chicken in the pot, increase the heat to medium-high, and sear until golden brown on all sides, approximately 10 minutes.
  • Combine the sausage and vegetable mixture with wine, broth, bay leaves, and red pepper flakes in a pot. Bring to a boil, then simmer on medium-low heat, covered, until the chicken is no longer pink in the centers, for 35 to 45 minutes.
  • Remove the aromatic bay leaves and present the succulent chicken alongside fresh orange wedges.
