Jack-o'-lantern and cat-face cup cakes

Spooky Halloween cupcakes that are as cute as they are delicious.
Ingredients:
  • 250.00g butter, softened
  • 150g (2/3 cup) caster sugar
  • 8.80 gm vanilla essence
  • 2 eggs, at room temperature
  • 225g (1 1/2 cups) self-raising flour
  • 125ml (1/2 cup) milk
  • 95g (1/2 cup) dark choc bits (Nestle brand)
  • 1 x 19g tube red glossy decorating gel (Cake Mate brand)
  • 1 x 120g pkt black licorice (1 metre) (Fyna brand)
  • 12 green Smarties (Nestle brand)
  • 60g (1/4 cup) white sugar
  • 3-4 drops orange liquid food colouring, to colour
  • 1 x 19g tube black glossy decorating gel (Cake Mate brand)
  • 230g (1 1/2 cups) icing sugar mixture
  • 20.60 gm milk, at room temperature
  • 2-3 drops orange liquid food colouring, to colour
Instructions:
  • Preheat the oven to 180°C and prepare a 12-hole muffin pan with patty cases.
  • In a large bowl, use an electric beater to cream together butter, sugar, and vanilla essence until light and fluffy. Add eggs one at a time, beating well after each addition. Gently fold in half of the flour and milk, then repeat with the remaining halves, until fully combined. Finally, stir in the chocolate chips.
  • Divide the mixture evenly into the pans. Bake in the preheated oven for 15 minutes or until a skewer inserted in the center comes out clean. Let it rest for 5 minutes out of the oven before transferring to a wire rack. Allow to cool completely for about 30 minutes.
  • For the butter icing, cream the butter with an electric beater in a large bowl until fluffy. Slowly incorporate the icing sugar until the mixture lightens. Slowly pour in the milk and beat until smooth. Divide the icing into two bowls. Mix orange food coloring into one bowl. Cover both bowls with plastic wrap and set aside.
  • For cat-face cakes, evenly spread plain butter icing on 6 cakes. Use red gel to draw cat noses and mouths on each cake. Cut 12 triangles from the licorice for ears and 12 thin strips for whiskers. Create eyes using green Smarties and add a dot of red gel on top of each Smartie.
  • To assemble the jack-o'-lantern-face cakes, evenly spread the vibrant orange butter icing over each cake. Coat the sugar with orange food coloring in a plastic bag until evenly colored, then sprinkle it over the cakes. Cut the licorice into eyes, mouth, and a stalk and place them on the cupcakes to form a fun face. Finish by drawing a spooky zigzag across the top of each cake with black gel.
